Hij wordt gekenmerkt door een bijna absolute afhankelijkheid van inheemse producten, geconditioneerd door de isolatie van de eilanden Ibiza en Formentera. Dit tekort aan producten, gecombineerd met de creativiteit en het gebruik van hoogwaardige ingredi\u00ebnten (zoals vis), leidt tot traditionele recepten zoals: de boerensalade (met gedroogde vis), <em>Frit de polp<\/em> (met gebakken octopus), <em>Sofrit pag\u00e8s<\/em> (met vlees en aardappelen), <em>Calamars a la bruta<\/em> (gebakken inktvis in eigen inkt) of <em>Bullit de Peix<\/em> (visstoofpot met aardappelen). Peix sec (gedroogde vis). Op Formentera droogden de vissers de vis om het hele jaar door vis te kunnen eten. Vandaag de dag is het een gastronomische attractie op het eiland en heeft het de onderscheiding \u201cArk of Taste&#8221; gekregen, verleend door de internationale Slow Food-organisatie. Het is het hoofdbestanddeel van de boerensalade, die in veel restaurants op het eiland geproefd kan worden. De hoge kwaliteit is voornamelijk te danken aan de krachtige filtratie, oxygenatie en mineralisatie van het zeewater, naast het effect van de Posidonia Oceanica in het zeereservaat.<\/p>\n<p>Honing is een product van eigen bodem dat zijn uitstekende kwaliteit dankt aan de droge flora en de afwezigheid van chemische producten. Afhankelijk van het seizoen wordt het gemaakt van rozemarijn of tijm.<\/p>\n<p>Gedroogde vijgen waren lange tijd een van de basisproducten van de plaatselijke keuken. Momenteel worden ze zeer gewaardeerd om hun intense smaak, die wordt benadrukt door de anijs en laurierbladeren waarmee ze in het productieproces worden gearomatiseerd. Samen met kaas en amandelen zijn vijgen een uitstekend dessert.<\/p>\n<p>De verse kaas van Formentera wordt over het algemeen gemengd (geiten- en schapenkaas) en omdat hij voor eigen gebruik wordt gemaakt, volgt hij de richtlijnen van de traditionele productie.<\/p>\n<p>Bescuit is het brood dat het resultaat is van langdurig bakken, waardoor het een consistentie heeft die vergelijkbaar is met geroosterd brood. In feite moet het worden gehydrateerd voordat het wordt gegeten. Het is een van de bijzondere ingredi\u00ebnten van de boerensalade.<\/p>\n<p>Kruidenlikeur wordt meestal op Ibiza verkocht, maar in veel huizen en restaurants op Formentera wordt een huisgemaakte kruidenlikeur gemaakt van de vele aromatische kruiden van het eiland. De wijnen van het eiland worden zeer gewaardeerd omdat de wijnstokken meestal onge\u00ebnt zijn, dus niet de Amerikaanse ge\u00ebnte wijnstokken zoals in een groot deel van de rest van Europa wordt gebruikt. Dit is te wijten aan het feit dat de druifluisplaag, die in de tweede helft van de 19e eeuw de Europese wijnstokken verwoestte, de wijngaarden van Formentera niet heeft getroffen, mede dankzij de geografische isolatie. Ook in veel huizen wordt de traditionele vi pag\u00e8s gemaakt, meestal voor eigen gebruik.<\/p>\n<p>Er zijn twee wijnmakerijen op Formentera: Terramoll en Es Cap de Barbaria.
